I've been cleaning up my diet the past few months. Slowly but surely, my eating habits (well - let's say 85% of the time) are coming in line with what is considered "healthy". But let's face it - eating healthy isn't exactly an easy thing to do. You have to plan for it. You have to change the way you grocery shop and change the staple snacks and dinners you prepare in your home. It's a lot of change.
We've been eating a lot of chicken - I mean a lot. Probably three or four meals a week are prepared with some sort of chicken. And any recipe that calls for ground beef gets substituted with ground turkey. Basically - I've been avoiding red meat.
This morning I threw three frozen chicken breasts in the crockpot and poured two cans of 98% fat-free cream of chicken soup and one can of cheddar cheese soup over top. (Let it cook on low all day and pour over brown rice - YUMMY!!)
Earlier this afternoon, I informed hubby that we would be having chicken and rice for dinner to which he replied, "Really? I mean - I love it, it's good. But I need some beef in my life!"
Umm....yeah....about that. We don't have an ounce of beef anywhere in our fridge or freezer at the moment. I guess I'm going to have to break down and buy some good steaks for dinner Sunday evening. Hubby is the *master* griller. I swear his steaks are better than any steakhouse I've ever eaten at. So I will have to make an effort to plan for a few lean beef meals over the next few weeks.
Everything in moderation right? After all, the man needs some beef in his life!

I think if you use the 97 or 96% lean it's definitely not as bad, and as far as sodium, could be better than ground turkey. Beef once a week won't kill you, if it's what he loves. Or you guys can go out and he can have beef while you still have chicken. We eat chicken or pork ALL THE TIME!
I can't even cook chicken any more in our house b/c when my husband and i first got together back when we were in high school that was all i knew how to cook so we ate chicken a lot! Now he wont even touch it!
I love meat. I eat it all the time. Steak and stuff like that is okay; like if it is lean cut, like sirloin. I read somewhere, I believe on Jillian Michaels site, that it can actually help you lose weight.
The week that David and I were celebrating our anniversary, I hate about THREE lbs of steak, and that wasn't including the hamburgers (yikes!). It was sooooo yummmy though!
I can't be the only one who instantly shouted out loud "That's what SHE SAID!" upon reading your hubby's comment, right?!?
I wish I like chicken more--I like it in things, but just on it's own, I get pretty sick of it pretty fast. I do like that crock pot recipe though, I'll have to give that a try.

A steak every now and again in moderation is totally fine!
I hardly ever eat red meat, but every once in a while I will get it at dinner. However, I will tear up a filet mignon!
Hahaha!!! You should meet my husband when I try to get him eating healthier! He has high cholesterol and so no more red meat for him. He would give anything for a burger or a steak!! I really don't mind not having red meat but every now and then I'll crave some!
All this talk about cooking, reminds me that I will need to start doing that again once my Fox comes home. I really don't like cooking all that much. I feel like I never know what to make? And we always have the same ol' stuff week end and week out.
chicken is the only thing in my freezer too!
That made me laugh- I could so see my fiance saying that! He's gotten used to my making alot of chicken, turkey or fish meals but we'll do beef occasionally and he always says we should eat it more often!
Yeah, I hear ya.- We're not red meat people, but every now and then we both need a good steak fix! We had some delicious steak when we fondued! That was a treat.- Hope you have a wonderful weekend coming up! Enjoy your grilling :-)

Amber, you should start getting bison!! It's fantastic and really healty. Tastes just like beef, only leaner. It has more protein than beef and less fat/cholesterol than fish or chicken! My husband and I haven't had beef in years...we use bison in everything. You can substitute it for beef in nearly any recipe. You can get bison (bison steak or ground bison) at Whole Foods and other health stores. It's a little more than beef, but I promise you'll love it and your husband will be SO happy!

Its so funny to read your post cause I'm always wanting to eat more chicken and Damon always wants his meat!!! Has to be something with men and their steaks..and potatoes!! Your crockpot chicken sounds GREAT!
